Olives in brine is a characteristic Sardinian product. Flavors and preservatives used are exclusively natural and, since there are no chemical preservatives, after a few months a film above may form: it is therefore advisable to wash the olives with natural water in a wide enough sieve and eventually put them back in the pot with water and salt.
